Rainbow Bean & Veggie Wraps

This works as an assembly recipe. Younger kids can do everything except optional warming. Older kids can handle it fully.

Ingredients (serves 4):

  • 1 can black beans or pinto beans, drained and rinsed
  • 1 cup shredded carrots
  • 1 cup finely chopped red cabbage or lettuce
  • 1 avocado, mashed
  • 1 small tomato, diced
  • Whole wheat tortillas or wraps

Optional extras: shredded cheese, plain yogurt, squeeze of lemon or lime, mild salsa

Steps:

  1. In a bowl, mash the beans lightly with a fork. Kids do not need to make them smooth.
  2. In a second bowl, mash the avocado. Add a tiny pinch of salt if desired.
  3. Lay out tortillas. Spread avocado first, then spoon beans on top.
  4. Let kids add carrots, cabbage or lettuce, and tomato. Encourage color.
  5. Optional: sprinkle a small amount of cheese or add a spoon of yogurt or salsa.
  6. Roll the wrap and slice in half.
